NEW CONCEPT RESTAURANT TO BRING JAPANESE FLAVOUR TO CIRCUS STREET

Located on the ground floor of The Office in Circus Street, Brighton, FUMI will offer morning coffee, breakfast and brunch as well as sushi and bento box lunches. In the evening, it will transform into a stylish fine-dining Japanese restaurant.

 

Overseen by designer and entrepreneur Fabio Lauro, who leads the Wolfox Collective among other thriving Brighton businesses.that include a chain of coffee shops, a boutique hotel, several restaurants which are supplied by his hydroponic farm and artisanal bakery.

 

“Following the huge success of our plant-based Japanese restaurant Kusaki in New England Road, our superb Japanese chef will be elaborating a mixed meat, vegetarian and vegan menu, creating something special and unique for this exciting new space,” said Mr Lauro.

 

“Despite the popularity of Japanese cuisine, there is not currently a fine dining experience on offer in the city and we are creating a place for people to enjoy special occasions and smart dinners, inspired by nature and seasonality, which will be a real treat for Japanese food lovers.”

 

Sustainability is a key ingredient of FUMI which uses local, seasonal ingredients where possible, including their own locally brewed beer. Fabio’s team will start fitting out the space in August with many of their furnishings designed by another of his enterprises, Six Studio Designs.

 

“We are thrilled to welcome Wolfox as the latest in a list of top-class brands and businesses which will help us to create an exciting, innovative and joyful atmosphere in the new Circus Street community,” said Rob Sloper, Development Director at U+I, the Circus Street developers.

 

Wolfox is joining other businesses setting up in the Circus Street quarter: global tech firm Hyve Managed Hosting has snapped the top two floors of The Office and White Cloud Coffee are across the public square from The Office, overlooking landscaped public spaces around South East Dance’s new Dance Space.
